Apple Cake


Cake :
-2 eggs
-2/3 cup oil 
-2 cup sugar
-1 t. vanilla
Mix all. Then add:
-2 cups flour 

-1/4 t. salt
-1 t. soda 

-2 t. cinnamon
Mix. Gently stir apples & nuts til well coated:

-4 large (or 6 small) apples peeled & sliced thin
-1 cup pecans (chop) 
Place in a greased, floured 9x13 pan.
Bake at 375 for 15 minutes, then at 325 for 30 minutes

Icing:  (the best part) **
-8 oz. cream cheese softened
-1/4 cup cutter softened
-1 cup powdered sugar
-1 t. vanilla
Stir. Then frost your cooled apple cake. Enjoy.

**The icing is the same for these Jenny B's Pumpkin Cookies. The cookie icing will frost both recipes.  Why not bake both?
